I was talking with our potential foster child last week, and when we started talking about food I mentioned that I’m plant-based. She curled up her nose and said, “Wait, you mean all you eat is salad?”
And although she’s a kid, that’s a common response even among adults. It’s bizarre how this society has convinced everyone that vegan eating is sparse, repetitive, bland, expensive and even unhealthy. The truth is, I eat far more variety and spend far less than I did when I was eating the Standard American Diet, and I’m healthier than the vast majority of Americans - especially those of my age (55.)
I also don’t spend my entire life in the kitchen. That’s another popular misconception. I’m not dancing around in my apron working on my food blog, because my goal is to get in and out of the kitchen as quickly and healthfully as possible and onto my next thing. So I rarely use recipes to create my meals, I just mix and match different components.
These are my dinners from the past 8 days. As you can see I do have a couple of hearty salads here, but it’s certainly not the bulk of what I’m eating.
